First heard this used in person, found this link
“STREP AND EVERYTHING YOU SHOULD ABOUT EBOLI!”
http://members.tripod.com/countdowninsite/page4.html
”(The disease is never identified, but seems to be of the gut-liquidifying Eboli variety.)”
http://www.acidlogic.com/cabin_fever.htm
In some cases the person seems to mean Ebola (as in the link above) in other cases they seem to be thinking of e-coli… the similarity of the names and the fact that both are in the news seems to be the cause of confusion. (Though there is one link where the person is confusing “eboli” with bird flu!)
It’s not just a typo for ebola, as when I’ve heard it used in person it was pronounced like e-coli.

Yeah, I just heard this one in conversation the other day.
The Urban Dictionary says this about it:
eboli
Mixing up Ebola and E-Coli. used by the under-informed population when trying to sound intellectual by talking about current events, but they get the two diseases confused and think they are the same thing.
Other examples and variations:
Now E.boli virus is some scary chit. Be afraid. Be very afraid of E.boli
