Assuming that some of these aren’t meant as a joke, I think we have an eggcorn here. The pronunciation similarity, especially in some dialects, is clear. Re: the meaning—the only relevant “meaning” of “shucks” in this context is that it begins with the same sound as “shit” and is therefore useful as a euphemism. “Shark” “means” the same thing in this context. Eggcorn, sez I.
