Marshmallow vs. marshmellow

I suspect that since very few people are familiar with the group of plants known as ‘mallows’, nobody knows that the candy called ‘marshmallow’ was originally made with mallow root. It makes more sense to reshape it as ‘marshmellow’, because a soft, mild candy could perhaps be described as ‘mellow’.
