Marshmallow vs. marshmellow

“Now what child recipe site would be complete without a good marshmellow recipe? As colourful as you want, sticky and wobbly, what more could a child want for in a food? :-). A lot easier to make if you have an electric beater however…” ( from http://www.kid-craft-central.com/marshm … ecipe.html )

I suspect that since very few people are familiar with the group of plants known as ‘mallows’, nobody knows that the candy called ‘marshmallow’ was originally made with mallow root. It makes more sense to reshape it as ‘marshmellow’, because a soft, mild candy could perhaps be described as ‘mellow’.
