My husband who’s a foreigner says “She’s such a space cake” instead of “She’s such a space case.”
I also found it a couple of places on the internet such as in the Urban Dictionary, but on the Urban Dictionary it got mostly thumbs down ratings with the “space case” definition under “space cake,” presumably because this is not the normal usage of this term.
Space Cake is also the name of a metal/funk band from England as well the slang for foods with marijuana baked into them.

“Space cake” may be categorized in many different ways depending on the utterer and his intent. Even an idiom blend of “space case” and “fruit cake” is possible. This latter possibility overshadows the eggcorn possibility for me. Others may disagree.

Never thought of the idiom blend. Good proposition. Explains the absence of imagery for me. Truelori, please ask you husband what he was thinking, I’ll wait with bated/baited breath!
