‘Age defying’ is a popular cliche of cosmetics advertising. This is one of those peculiar substitutions that more or less inverts the intended meaning.

There seem to be a couple/three meanings that “age defining” could convey. One conventional meaning is the characteristics of a particular epoch (such as the Jazz Age) which makes it distinct. A second meaning is the aspects of reaching a certain age in life such as an abundance of gray hair. I’m guessing that Ken is referring to this second meaning when he speaks of an inversion of meaning for the third (eggcorn) meaning; It’s as if the beauty products described are able to re-define one’s age. Very nice eggcorn find.
